About the Knife Maker
Where the Passion Started
My name is Clinton Shank. I've had a long career of working with my hands, first in construction and then in the culinary industry. Though vastly different industries, both require you to build something with raw materials using creative finesse and tasteful editing.
My passion for knife making took root after culinary school where I landed a position working as a butcher in a well respected butchery and fine dining establishment in Sacramento. I learned different cuts, techniques and the importance of using the right tool for the task at hand. From there I worked up to being the Head Chef at a local Bistro. I was afforded the opportunity to learn new techniques and the refinement of not only Japanese cuisine, but the knives and craftmanship that went in to making them. It was at that point that I realized my dream really was in becoming a knife maker.
I didn't want to make just any knife though, I wanted to build custom cutlery and knives that would be high in quality, practical and made to withstand the test of time.
